I’ve been really trying to incorporate more vegetables into my life lately. So, this dish is not the result of a low carb diet, it was really about trying to incorporate more vegetables into our taco Tuesday this week. However, this could definitely be part of your low carb diet, if that’s your thing!
I don’t know about you, but almost every time I try Spanish rice at a restaurant it is completely boring. For me, if it’s boring, tasteless and full of calories, I’d rather eat something else. This version of Spanish rice substitutes the cauliflower for rice and wow does it have a lot of flavor. Try it on your taco day with your family and you’ll feel a lot better about what they’re eating.
As my husband and I were eating this we actually googled the health benefits of cauliflower. To our surprise, it’s a nutritional powerhouse! Check it out and grab another spoonful of “rice.”
Cut cauliflower into florets and place into a food processor. Pulse until finely chopped, slightly larger than actual rice.
Over a medium high heat, melt butter with olive oil. When melted add cauliflower, onion, garlic and spices. Cook for 5 minutes.
Mix chicken broth and tomato paste in bowl, add to the cauliflower mixture and cook another 5 minutes until broth is absorbed and cauliflower is tender. Add salt to taste.
