So, this dish is not the result of a low carb diet, it was really about trying to incorporate more vegetables into our taco Tuesday this week. I don’t know about you, but almost every time I try Spanish rice at a restaurant it is completely boring. For me, if it’s boring, tasteless and full of calories, I’d rather eat something else. This version of Spanish rice substitutes the cauliflower for rice and wow does it have a lot of flavor. Try it on your taco day with your family and you’ll feel a lot better about what they’re eating.
As my husband and I were eating this we actually googled the health benefits of cauliflower. To our surprise, it’s a nutritional powerhouse! Check it out and grab another spoonful of “rice.”
