Shrimp Tostadas

This fresh and delicious mexican dish makes me feel like I’m on a tropical vacation. The shrimp and guacamole just scream beach to me for some reason.  You definitely have to try making the shells yourself, it just takes a few minutes and it’s sooo worth the extra work!

Ingredients
  • 12 Shrimp
  • 4 Corn Tortillas
  • 1 Avocado
  • 1 Tomato
  • 1/2 Onion
  • 1 T Cilantro
  • 1 Lime
  • 1/2 t chili powder
  • 1/2 t garlic powder
  • 1/2 C canola oil

Instructions
  1. In a bowl combine chili powder, garlic powder, salt, pepper and olive oil. Stir in shrimp.
  2. Chop tomatoes, onions and cilantro. Place in a bowl, add salt and pepper to taste and 1 tablespoon of lime juice.
  3. Scoop avocado into a bowl and mash. Add salt and pepper to taste and a little bit of lime juice.
  4. Heat canola oil in a small skillet over high heat until hot. Place a corn tortilla in the hot oil, cook for about 2 minutes per side or until crispy. Remove and set on a folded paper towel to absorb excess oil.
  5. **Tip - I place a small sauce pan on top of the tortilla to make sure it stays flat.
  6. In a large skillet, sauté shrimp for 2 minutes on each side.
  7. Assemble tostadas by smearing guacamole onto the tostadas, top with shrimp and pico.
