Shrimp Scampi

This summer I took my first trip to Europe… first stop Barcelona, Spain. Of course any vacation of mine is filled with delicious food and drinks. This is one of those delicious dishes, along with the famous spanish croquettes, patatas bravas, and iberico ham sandwiches. In Spain this dish is called gambas al ajillo, meaning garlic prawns. You’ll definitely fall in love with this recipe. It’s so simple but it tastes like you’ve spent hours on it.

Ingredients
  • 18 Shrimp
  • 3 T olive oil
  • 3 Garlic Cloves
  • 1/2 t Red Pepper Flakes
  • 1 T butter
  • splash Sherry
  • 1/4 cup chicken or seafood broth *preferably reduced to increase flavor

Instructions
  1. Wash and thoroughly dry shrimp, Season with salt and pepper.
  2. Heat olive oil on high for 1 minute then add shrimp and saute for 2 minutes on each side.
  3. Add garlic and cook for 1 minute, then add sherry and broth. Bring to a boil and cook for an 2 additional minutes. Finish with butter and red pepper flakes. I also like to add a little parmesan cheese to the top every now and then!
  4. Plate in warm bowls, or serve over linguine for a delicious meal!
