Lobster Bisque

Lobster Bisque. When it comes to soup, does it really get any better? The buttery, creamy richness of this soup will take any meal to the next level, or definitely shine on its own.

This bisque became a hit at our family Christmas Eve dinner a few years back, even the kids love it. The satisfaction I get when I watch my Sister-in-law Carrie and nephew Jack eat this is worth any trouble it is to make it. Trust me, this will be a hit at your party too!

Ingredients
  • 10 oz Lobster More if you like!
  • 1 C Onions
  • 1/2 C Carrots
  • 1/2 C Celery
  • 4 cloves garlic
  • 3 T Tomato Paste
  • 3 T Flour
  • 3/4 C White Wine
  • 1/4 - 1/2 C Hennesy
  • 2 C Lobster Stock I buy a jar of base and make broth.
  • 1 1/2 C Cream
  • 1 1/2 t Paprika
  • Salt & Pepper to taste

Instructions
  1. Melt butter and saute onions, carrots, celery and garlic until translucent.
  2. Stir in tomato paste and sprinkle flour over all the vegetables. Saute for 1 minute.
  3. Deglaze the pan with the Hennesy and white wine. Cook for 2-3 minutes. Add stock and paprika. Chop the lobster, add 3/4 of the meat and reserve the rest for garnishing. If you'd rather not garnish, go ahead and add it all at this point.
  4. Pour in cream, stir. Use an immersion blender or a traditional blender to puree.
  5. If you are garnishing, slowly warm the lobster in a 1-2 tablespoons of butter.
  6. Ladle into soup cups/bowls and top with a few pieces of the buttered lobster. Prepare to be amazed, this is an incredible treat.
