Garlic Pasta with Italian Sausage and Roasted Broccoli

This dish is a combination of some fantastic pairings. I’ve joined them all together to make a delicious pasta dish that tastes like it took hours to make. You can really customize this dish by using your favorite sausage. I happened to be at an Italian grocery store and picked up a fennel, mild and hot Italian sausage, the combination was delicious providing a little bit of everything. Most grocery stores sell mild and hot Italian sausage, but you could even use brats if you like. Experiment and please share your favorites with me!

Ingredients
  • 1/4 C Extra Virgin Olive Oil
  • 4 Cloves garlic
  • 1/4 t salt
  • 1/4 box Spaghetti
  • 3 Links Italian Sausage I used one fennel, one mild, one hot
  • 3 C Broccoli Florets
  • 1-2 T olive oil
  • Red Chili Flakes to taste

Instructions
  1. Set olive oil on lowest heat level possible on your stove. Add garlic cloves and salt. This will slowly infuse the garlic into the olive oil.
  2. Heat oven to 400 degrees. On a cookie sheet place broccoli florets and 1-2 T olive oil and toss. Add salt and pepper to taste. Roast for 15 minutes.
  3. Remove skins from sausage. Heat a large skillet to medium-hot and cook sausage while breaking up into small pieces.
  4. Boil water for pasta. Cook to instructions on the box, making sure to salt the water before adding the noodles.
  5. Toss cooked noodles into skillet with cooked sausage, add broccoli and drizzle on garlic oil until noodles are well coated. Sprinkle with red chili flakes.
