Chicken Piccata

Many people have heard of Chicken Marsala, but aren’t sure what Chicken Piccata is. The very definition of Piccata is “cooked in a sauce of lemon, butter and parsley.” Sounds simple, right? It is. The buttery, lemon goodness of this chicken dish will definitely knock your socks off and leave you with plenty of time to enjoy your evening. Try this quick chicken dish on a weeknight, dinner will be served in under 30 minutes.

Ingredients
  • 2 Chicken Breasts
  • 1/2 C Chicken Broth
  • 4 T butter
  • 1 T olive oil
  • 1/2 Lemon
  • 4 Lemon Slices
  • 2 t Capers
  • 1/2 C Flour
  • Parsley
  • Salt & Pepper
  • Mashed Potatoes

Instructions
  1. Place raw chicken breasts into a freezer bag and pound until all sides are the same thickness. I use the flat side of the meat tenderizer. If you don't have one, you can use a heavy pan.
  2. Add Flour, Salt and Pepper to a plate and coat chicken evenly.
  3. Place 1/2 of the butter and all of the olive oil in a pan, heat over medium high heat. Once hot, add chicken. Cook on each side for 3 minutes, or until browned. Remove.
  4. Squeeze lemon into the pan, add broth, capers and lemon slices. Simmer for 5 minutes. Add remaining butter and some chopped parsley.
  5. Once butter is melted, add chicken back to the pan to coat in the sauce.
  6. Plate with mashed potatoes and drizzle of sauce. Enjoy!

TIMESAVER TIP: Obviously no one has time to make mashed potatoes for a weeknight meal. I use Idahoan instant mashed potatoes when I don't have time to make the good stuff.
