Chicken Marsala Gnocchi

This is another weeknight favorite of mine. In twenty minutes you can have a delicious meal your family will love. This is a little different twist on Chicken Marsala using gnocchi as the starch instead of noodles or mashed potatoes. It’s really delicious with the sweetness of the Marsala wine, the saltiness of the broth and a little butter to round things off. I think you’ll enjoy this version!

Ingredients
  • 1 1 olive oil
  • 3 T butter
  • 2 Chicken Breasts
  • 1/2 C Flour
  • 1/2 C Marsala Wine
  • 3/4 C Chicken Broth
  • 4 Oz mushrooms
  • 2 T Chopped Parsley
  • 1 t garlic powder
  • Salt & Pepper
  • 1/2 Pound Gnocchi

Instructions
  1. Coat both sides of the chicken breast with flour, salt and pepper.
  2. Heat Olive Oil and 1 T of Butter in a pan. Add chicken breasts and saute for 3 minutes on each side, or until cooked through. Remove.
  3. Deglaze the pan with Marsala Wine. Heat on high until reduced to 2-3 T. Add Chicken Broth.
  4. Add Chicken back to pan, along with mushrooms and 2 T of Butter. Simmer for 3-4 minutes until mushrooms are soft.
  5. Remove Chicken and add gnocchi. Coat in sauce and add parsley.
  6. Plate and serve!
