This recipe is from my very first cookbook, I bought it when I was in college. It’s not a particularly fancy dish but it’s a staple in our house and one of my personal favorites. Back in the 90’s Chi-Chi’s Restaurant was one of my favorite places to go. They had the best fajitas, salsa, enchiladas, basically any Mexican staple. To my recollection they were one of the first restaurants to serve fajitas on the hot cast iron skillet. The smell of the smoking meat as it crossed the restaurant was amazing and made everyone take notice of your dish. This recipe is very close to those delicious fajitas from Chi Chi’s Restaurant.
