Carrot Ginger Dressing

If you’ve ever been to a Japanese steakhouse, you’ll recognize this salad dressing. It’s simple, flavorful and healthy. It’s perfect on iceberg lettuce with a few cucumbers or you could add it to any salad. When we have a lot of extra time we’ll make this salad to go along with a hibachi style dinner. It’s definitely one of my favorites.

Ingredients
  • 1/2 Onion
  • 2 Carrots
  • 1 Celery Stalk
  • 2 T Ginger (From Jar)
  • 2 t Lemon Juice
  • 1 T Ketchup
  • 1 T Sugar
  • 2 T Water
  • 1/2 t salt
  • 1/4 C Rice Vinegar
  • 2 t Soy Sauce
  • canola oil

Instructions
  1. Place all ingredients except oil into a food processor. Blend for 30 seconds.
  2. Drizzle in oil until desired consistency, I use as little as possible. This dressing can be very healthy but if you like your dressing on the silky side, you'll need to add a bit more oil.
