Caramelized Sweet Potatoes with Avocado Crema

There is an incredible restaurant in Detroit called Katoi. Earlier this year it was broken into and set on fire. A horrible tragedy for the owners and for the huge following they had.

One of their signature dishes is something they called Thrice Cooked Sweet Potatoes, which is absolutely delicious. To save my wallet and waistline, I’ve created my take on this dish.

This dish only cooks the sweet potatoes once, but definitely still gives you a wallop of flavor. The sweet potatoes are sweet, sticky and toast up like a marshmallow. The avocado crema adds a creamy, fresh element and to take it a step further the sunflower seeds add a salty note. Give it a try, it’s a game changer for sweet potatoes.

Ingredients
  • 1 Sweet Potato (Large)
  • 1 Avocado
  • 2 T Cilantro
  • 2 T Sour Cream
  • 4 T Water
  • salt
  • pepper
  • Coconut Oil
  • 1 t Agave
  • 1 t Sunflower Seeds
  • 2 t Lime Juice

Instructions
  1. In a food processor or blender, combine avocado, cilantro, sour cream, lime juice and water. Blend until smooth and thin enough to drizzle. Add more water to dilute if necessary. Set aside in the refrigerator.
  2. Peel and slice sweet potatoes in approximately 1/4" slices.
  3. Coat sweet potatoes in coconut oil on both sides. Salt and pepper.
  4. Cook sweet potatoes in a preheated oven at 500 degrees for 10-15 per side or until caramelized.
  5. Remove from oven, drizzle with agave, avocado crema, cilantro and sesame seeds.
