Buffalo Chicken Sweet Potatoes

This dish was definitely one of those strange ideas that came to while lying awake at night, thinking about food. My thoughts were, I like hot wings with sweet potato fries – what about making it healthy by using rotisserie chicken and sweet potatoes. Score! This is amazing, you have to try it for yourself.

Ingredients
  • 2 Sweet Potatoes
  • 2 C Shredded Rotisserie Chicken
  • 1/2 C Buffalo Sauce Your Favorite Brand (I used Spicy Garlic from Buffalo Wild Wings or Franks Buffalo)
  • 2 T Ranch Dressing
  • 1 Green Onion
  • 2 t butter

Instructions
  1. Bake Sweet Potatoes at 400 degrees for 45-60 minutes.
  2. While Sweet Potatoes are baking, shred rotisserie chicken.
  3. In a small sauce pan, warm buffalo sauce and add chicken. Stir until chicken is completely coated. Cook until chicken is hot and tender. You can add a little water if your sauce is too thick. You want to be sure it's nice and saucy. **This process takes about 5-10 minutes, try to time this so the chicken is hot when the potatoes come out. You just need to get it warm enough to eat.
  4. Once potatoes are done, remove from stove. Cut a slit in the top lengthwise and squeeze sides to soften the potato.
  5. Using a fork work the butter into the softened potato.
  6. Spoon half of the chicken on top of each potato.
  7. Drizzle with ranch and top with green onions.
