Buffalo Chicken Alfredo with Squash Noodles

Starting this weekend, I’ll be adding a section for easy weeknight meals. So you know, I work a full time job and work on my blog at night and on the weekends. I don’t have kids at home but have many friends who do. Time is tight on weeknights, so we all need quick meals we can be proud of but don’t take time away from our families in the limited time we have available after work.

This recipe is just that, a short cut recipe. I know it’s a cheat that I used jarred Alfredo sauce, for me that’s ok every once in a while. I still made a dish that was creative, healthy and delicious. So, if you’re in a hurry and looking for something you can make in under 30 minutes, this is perfect!

This recipe really helps satisfy cravings for hot wings or something spicy, but you don’t feel so bad about it after. Enjoy!

Ingredients
  • 1 Large Chicken Breast
  • 1 Container Spiral Sweet Potatoes Or 1 Sweet Potato Spiralized
  • 1 Jar Alfredo Sauce Or Homemade (I'll post a good recipe soon)
  • 1/4 Cup Frank's Red Hot or Buffalo Sauce
  • 2 Green Onions

Instructions
  1. Slice a chicken breast into bite size pieces. Heat a large skillet to medium high and saute chicken until cooked through and slightly brown. Remove from heat and place in a bowl.
  2. Pour Alfredo Sauce and Frank's Red Hot into a sauce pan. Heat over medium heat until bubbling. You can add more hot sauce to the Alfredo if you like more heat.
  3. Drizzle 2-3 tablespoons of olive oil into the skillet you cooked the chicken in, add squash noodles. Cook over medium high heat for 5-10 minutes, or until tender.
  4. Toss chicken back in and pour sauce over the noodles. Toss to coat.
  5. Plate and top with green onions.
