Asian Chicken Lettuce Wraps

If you’ve had the pleasure of visiting P.F. Chang’s you know how good Chicken Lettuce Wraps are. This recipe is a bit of a twist PF’s version adding cashews and creating a slightly more saucy chicken. You’ll love this recipe and will definitely add your own twists each time you make it.

Ingredients
  • 2 Chicken Breasts
  • 1 Can Water Chestnuts
  • 1 Can Bamboo Shoots
  • 2 t garlic
  • 1 T Ginger From the Jar
  • 1/2 C Cashews
  • 5 T Hoisin Sauce
  • 1/4 C Soy Sauce
  • 2 T Sugar
  • 4 Green Onions

Instructions
  1. Cut Chicken in to very small cubes.
  2. Chop Water Chestnuts, Bamboo Shoots and Green Onions, set aside.
  3. In a bowl, combine, Soy Sauce, Hoisin, Ginger, Garlic and Sugar. Toss in Chicken. **For best results marinate chicken in this mixture for 30 minutes. It's not necessary, but the chicken tastes much better. If you don't have time, you don't have to.
  4. Heat a large skillet over high heat, add chicken and cook for 10 minutes.
  5. Add Cashews.
  6. Serve with Romaine or Butter Lettuce Cups. ENJOY!

  1. This was the best thing I’ve made at home in a while. So simple, but so good. I ate it as an entree using pork and butter lettuce. So good!
